Method of preparation :
Mix all the filling products in a bowl.
Put a sheet of baking paper in a tray.
Spread one sheet of puff pastry, if necessary roll it out - you need to have about 4 cm board around the fish fillet to be able to shape it. Transfer the dough to the pan.
Dry the fillets with kitchen paper and place one fillet on the puff pastry.
Put the stuffing on the fish, then place the second fillet.
Beat the yolk with a little water and spread the edges of the dough. Place the second sheet of puff pastry on top (roll out to be slightly larger than the base) and wrap the edges so that the fillets are tightly closed in a dough wrapper.
Spread with eggs, sprinkle with cumin seeds and sea salt.
Cool for 30 minutes (or overnight).
Make incisions in the dough and bake it at 180 degrees (in a preheated oven) for 50-60 minutes until the dough acquires a golden and crispy crust.
