How To Cook Stuffed Sweet Potatoes With Beans And Cream - Recipe

Required products :

  • 6 large sweet potatoes
  • 1 tablespoon olive oil
  • left
  • 1/2 cup fresh milk
  • 1/4 tea cup sour cream
  • 4 tablespoons melted butter
  • 1 1/2 teaspoons yellow cheese
  • 1 teaspoon canned black beans
  • 2 green onion stalks, thinly sliced
  • 2 cloves garlic, finely chopped
  • 1 teaspoon cherry tomatoes, cut into quarters
  • 1 avocado, diced
  • 1 small hot jalapeno pepper, chopped
  • 1/4 tea cup hard white cheese (goat) crushed

Method of preparation :

Preheat oven to 190 degrees.

Punch the potatoes with a fork and grease them with olive oil, salt and bake whole in the oven until soft. Cool, so you can touch them without feeling uncomfortable.

Cut a thin layer on one side of the potatoes so that you can reach their soft inside. Carve it, being careful not to thin the potatoes too much, they must retain their shape.

Mix the inside of the potatoes with the milk, cream and butter, mash. Add beans, 1 cup yellow cheese, green onions, garlic and salt.

Fill the potato boats with the resulting mixture, sprinkle with the remaining yellow cheese and bake for about 15 minutes.

Before serving, sprinkle with avocado, tomatoes, hot peppers and goat cheese.
