How To Cook Stuffed Sweet Potatoes With Beef And Tomato Sauce - Recipe

The tender sweet potatoes combine perfectly with spicy meat, yellow cheese and crispy lettuce. Optionally, prepare a variety of side dishes to have a wide choice of flavors.

Required products :

  • 2 sweet potatoes
  • 1 tablespoon avocado oil (or olive oil)
  • 450 grams of lean beef
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon hot peppers chipotle
  • salt to taste
  • 1/4 tea cup of water
  • 2 tablespoons tomato paste
  • 1 cup grated yellow cheese
  • 1 small lettuce, chopped
  • 4 tablespoons classic tomato sauce

Method of preparation :

Wash the sweet potatoes well, then pierce them carefully on all sides with a fork. Put the potatoes in the microwave on high heat for 10-12 minutes.

Meanwhile, heat the avocado oil (or olive oil) in a large skillet over medium heat. Fry the beef, seasoning with chili powder, cumin, garlic powder, onion powder, hot chipotle peppers and salt. Stir the meat with a wooden spoon so that it is torn into small pieces. Cook until browned. Mix the water and tomato puree well in a small bowl and pour into the pan. Add 1/2 cup yellow cheese and stir to mix the ingredients well.

When the potatoes have cooled, cut them in half and carefully carve the inside with a knife or teaspoon. You will get a kind of potato boat. Mash the inside of the bowl with a fork and mix with the meat. Fill the boats with the resulting mixture. Garnish with yellow cheese, lettuce and classic tomato sauce .
