Required products :

  • 4 sweet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 3 soft avocados
  • 2 tablespoons lemon juice
  • 1/3 cup finely chopped garlic
  • 2 pressed garlic cloves
  • 1/4 teaspoon cumin
  • 2 tablespoons finely chopped coriander
  • 2 tomatoes, peeled and finely chopped
  • 1 cup grated cheddar
  • 1/4 tea sour cream

Method of preparation :

Pierce the sweet potatoes 5-6 times with a fork. In a microwave oven, heat 2 potatoes at a time for 3-4 minutes until soft. Repeat with the other 2 potatoes.

Allow them to cool, then cut them in half lengthwise. Remove the inside of the potatoes with a spoon.

Preheat the oven to 180 degrees. Coat the potatoes with olive oil and season with salt and place them in a pan with the cut side down.

Bake them for 15-20 minutes, until their skins become crispy.

While the potatoes are baking, prepare the guacamole. Cut the avocado in half, remove the seed and mash.

Add lemon juice, lime, garlic, cumin and coriander. Mash the products well, add the chopped tomatoes and season with salt and pepper to taste.

Once the potatoes are baked, turn them over with a pinch.

Put a little cheddar cheese in each potato. Allow the potatoes to cool for a few minutes, during which time the cheddar will melt.

Fill the chilled potatoes with guacamole and top with sour cream. If desired, you can make a certain shape on the guacamole by placing the cream in a bag and garnish.
