Cut onions and peppers and fry for about 10 minutes. Finely chop the garlic, add it and leave for another 2 minutes on the stove. Cut the chicken fillet into small cubes and fry until semi-finished. Add the fried onions and peppers to the meat, as well as the corn. Stir, season with salt, pepper and cumin, leave for about 5-7 minutes on the stove.
Cut off the top of the tomatoes and using a teaspoon, remove the inside (you can use it to make tomato paste). Grate the yellow cheese on a coarse grater. Fill the tomatoes with the resulting filling to the brim, cover tightly with yellow cheese and sprinkle with pepper. Arrange in a pan and place in a preheated 170 degree oven for about 10 minutes. Garnish with chopped parsley and serve on a lettuce leaf.
