Punch the eggplant with a fork and grill it for 10-15 minutes until soft. Transfer to a board, cool and peel. Mash the inside and cool for another 10 minutes.
Meanwhile, turn the oven to 200 degrees.
Cut the top of the tomatoes (keep the lids) and carve the inside, which you transfer to a blender. Add olive oil, a little salt and pepper and puree until smooth.
Pour the sauce into a pan, arrange the tomatoes on top and salt them.
Season onion, bulgur, minced meat and cumin with salt and pepper and mix with mashed eggplant. Mix well and fill the tomatoes with the resulting mixture. Place the lids on top and cover the tray with foil.
Bake for 15 minutes, remove the foil and continue baking until the tomatoes turn brown - for about 30-35 minutes.
Serve them sprinkled with finely chopped mint and parsley.
