We offer you a quick lean meal that you can prepare if you do not consume any animal products for one reason or another. Stuffed vegetables are always a good choice, they combine several flavors, are quick to prepare and look very good when served.

Cut the top of the tomatoes, and carve the inside and chop finely.
Put the chopped tomatoes in a bowl, add all the other products except the tomato juice and mix well.
Fill the tomatoes with the mixture and arrange them in a tray. Pour the tomato juice around them. Put the tomato caps on top and bake for 25-30 minutes at 200 degrees.
