How To Cook Stuffed Tomatoes With Mozzarella And Couscous - Recipe

You will need less than 1 hour to prepare these stuffed tomatoes , and as a result you will have 4 servings of a tasty appetizer. Each serving has only about 200 calories and as much as 11 grams of protein. 

 

Necessary products

  • 4 large tomatoes
  • 1 1/2 teaspoon vegetable broth
  • 1/2 cup dried tomatoes, finely chopped
  • 1 teaspoon couscous
  • 1/4 cup grated mozzarella cheese
  • 1/4 tea cup fresh basil, finely chopped
  • 2 tablespoons mint leaves, finely chopped
  • 1/4 teaspoon black pepper

 

Method of preparation

Preheat the oven to about 190 degrees.

Cut off the top of the tomato and carve out the other to make it look like hats. Save the carved insides of the tomatoes. Allow the tomatoes to drain on kitchen paper.

Pour the vegetable broth and tomato soup into a small saucepan. Put them on the stove until they turn, then remove. Pour the couscous into the pan, put the lid on and leave for 4-5 minutes.

Add the cheese, basil, mint and black pepper to the pan. Pour the insides of the tomatoes and stir.

Take from the prepared mixture and fill the carved tomatoes with it.

Arrange the tomatoes in a small pan and bake for about 30 minutes in the preheated oven. Serve while still warm. Enjoy!
