Heat olive oil in a pan and fry onions, garlic and mushrooms. Add the ham, thyme, white wine and stir. After reducing the liquid, remove from the heat and cool.
Roll the fillets in the flour and fill them with the vegetable stuffing. Sprinkle with breadcrumbs, fresh parsley, ground almonds and season with lemon juice.
Arrange the trout in an oven covered with a sheet of parchment, preheat the oven to 190 degrees and bake for an hour. Cool, arrange the fish on a plate, garnish with a salad of your choice and serve.
