How To Cook Stuffed Zucchini With Chicken, Tomatoes And Olives - Recipe

Required products :

  • 3 medium zucchini, cut lengthwise
  • 2 tablespoons olive oil
  • 1/2 head onion
  • 2 cloves garlic - chopped
  • 2 tea cups shredded chicken (pre-cooked)
  • 1 teaspoon dried oregano
  • salt and pepper
  • 1 can of 400 grams of chickpeas
  • 1/2 cup cherry tomatoes and halved kalamata olives
  • 1 teaspoon feta cheese or white brined cheese
  • 1/2 lemon
  • 3/4 tea cup diced cucumber
  • fresh dill

Method of preparation :

Preheat oven to 180 degrees.

Carve the core of the zucchini. Season the resulting boats and pour plenty of olive oil.

Bake for 15 minutes, then increase the oven temperature to 220 degrees.

While the zucchini are roasting, fry the onion (pre-cut it) in olive oil until soft. Add the garlic, and a minute later add the chopped zucchini. Fry for about 2-3 minutes.

It's time to add the chicken, chickpeas, halved cherry tomatoes and olives. After 5 minutes, remove from the heat and fill the zucchini.

Sprinkle with cheese and bake for about 10 minutes.

When serving, squeeze half a lemon and sprinkle with dill and cucumber.
