Method of preparation:
Pour oil into a saucepan, heat it and fry the onion first. Then add the diced zucchini, carrots and tomatoes. Add the tomato puree, chickpeas, chopped fresh onions and peppers. Stir, season with salt, black and red pepper.
Peel and slice the potatoes, mushrooms, peel the okra and add the vegetables to the mixture. Pour the wine and broth, stir and simmer over low heat. Add the bay leaf, optionally add a few grains of black pepper.
When ready, mix the flour with a little broth and return the mixture to the dish. Stir to thicken. Cool, pour portions and serve the casserole, sprinkled with chopped fresh parsley.
