Required products :

  • 1 onion, cut in half
  • 2 stalks of celery, finely chopped
  • 1 bay leaf
  • 1 tablespoon honey
  • 1.5 liters of vegetable broth
  • 500 grams of chopped red beets
  • a small piece of grated ginger
  • 100 grams of finely chopped radishes
  • 1/2 cup chopped cucumber
  • 4 green onion stalks, thinly sliced
  • 1 tablespoon dill

Method of preparation :

Put onion, celery, bay leaf, honey and vegetable broth in a saucepan. Season with salt and cook for 20 minutes.

Strain and arrange the beets in the broth. Cook for 15 minutes.

Allow the soup to cool, then put it in the fridge to keep it cold.

Just before serving, add the ginger and add a few ice cubes to each serving. Add the radishes, cucumber and green onions, sprinkle with a little dill and serve.
