Chop the meat with a knife so that you get a wide and flat piece (you can cut it into cubes if you wish). Then hammer it, cut into equal strips, and them - into squares. Add to the chopped meat the yolk, soy sauce, 1 tbsp starch, a little water, be sure to salt, mix well and leave to marinate for half an hour.
Cut the peppers and pineapple into equal squares in advance.
Roll the marinated meat in the starch (100 grams) and shake to drop the excess. Then fry in well-heated fat (about 190 degrees). Do not fry for a long time, stir and be careful not to stick the pieces. When the meat acquires a golden color, you must remove it from the oil and leave it on a wire rack or suitable paper to drain off excess fat. Fry again in hot oil for a very short time - such double frying will keep the pork juicy, with a crispy crust. Allow to drain once more.
The sauce is prepared as follows: cut the ginger into straws and fry it in a hot pan in which you put a little vegetable oil. Add the peppers and fry briefly. When they stop "popping" (chirping), put the pineapple and fry it lightly. Now you need to act even faster: pour vinegar into the pan, stir; add sugar, stir; then the ketchup and stir again. Thicken the sauce with the starch dissolved in water (1: 1), 1-2 teaspoons are needed. Pour the meat into the pan, stir and remove from the heat. That is all.
