Turn fresh strawberries and blueberries into a refreshing dessert with pea crackers and a filling of sweetened ricotta cheese. Strawberries are the basis of the cream, and the pleasant scent of fresh blueberries gives the dessert perfection. If you do not have blueberries, you can put any
other fruit to get your favorite flavor.

Required products :

  • 5 cups chopped strawberries
  • 2 teaspoons vanilla extract
  • 3 tablespoons cornstarch
  • pinch of salt
  • 2/3 cup water
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 3/4 cup cooking cream
  • 2 cups skim ricotta cheese
  • 1/2 cup powdered sugar
  • 2 teaspoons lemon zest, grated
  • 15 honey graham crackers
  • 1 cup blueberries

* A tea cup is used to measure the quantities.

Method of preparation :

Mix in a large saucepan the strawberries, 1 teaspoon vanilla extract, cornstarch, salt, water, sugar and lemon juice.
Cook over medium heat, stirring often, until boiling. Then continue cooking, stirring constantly until the mixture thickens. Remove from the heat. Refrigerate until the strawberry contents reach room temperature, or more precisely for about 1 hour.

sweetened ricotta cheese:

Meanwhile, beat the cream with a mixer until hard peaks form. Add the ricotta cheese, powdered sugar, lemon zest and the remaining 1 teaspoon of vanilla extract. Refrigerate until ready to assemble the lasagna.

assembly of lasagna:

Put 7 and 1/2 pea biscuits on the bottom of a tray measuring 22x30 centimeters. Spread on them half of the sweet ricotta mixture, then half of the strawberry mixture and half of the fresh blueberries. Arrange another 7 and 1/2 pea biscuits on top and repeat with the remaining mixture of ricotta, strawberries and blueberries. Cover and refrigerate for about 8 hours or overnight.

You can store strawberry lasagna in the refrigerator for up to 2 days.
