How To Cook Sweet Bread With Cottage Cheese, Orange And Raisins - Recipe

Necessary products

For the stuffing:

500 grams of cottage cheese
100 grams of raisins
1 orange
1/4 teaspoon sugar
2 teaspoons vanilla sugar
1 egg yolk
1/2 tablespoon butter

For the dough:

4 teaspoons flour
1/2 teaspoon sugar
30 grams fresh yeast
200 grams butter
2 eggs
1.5 teaspoons fresh milk
vanilla
pinch of salt


Method of preparation :

Dissolve the yeast in 1/2 teaspoon of warm milk with 1 teaspoon of sugar. Leave for 20 minutes until foam begins to form.

Beat one egg with a fork, mix the remaining milk, add a pinch of salt, sugar, vanilla, add 100 grams of softened butter and dissolved yeast.

Sift the flour into a bowl and pour the liquid combination over it. Make a dough that you knead with your hands for 10-12 minutes. Then cover it with a towel and let rise in a warm place for 1.5-2 hours. Its volume will double.

Meanwhile, make the filling.

Grate the orange peel with a large grater, being careful not to pinch the white part. Put in a bowl, pour boiling water and drain it 7 minutes later.

Heat 1/2 tablespoon butter in a pan and fry the citrus peel in it for about 5 minutes. Sweeten with 1 tablespoon of sugar and stir for about a minute until the sweet crystals are completely melted.

Wash the raisins. Mix the yolk with the remaining sugar and add to the curd. Add the raisins, vanilla sugar and orange peel.

Knead the dough once more and divide it into balls. Make flat cakes from each and put 1 tablespoon of the aromatic filling in the middle. Pinch the edges and leave the cakes to rise for 15 minutes.

Turn on the oven to preheat to 180 degrees.

Melt the remaining butter and dip each ball of dough in it. Then arrange tightly in a pan and smear their surface with beaten egg.

Bake until golden (about 25-30 minutes).
