How To Cook Sweet Christmas Cake With Dried Fruits, Nuts And Citrus Peels - Recipe

Required products :

  • 150 grams of raisins
  • 100 grams of candied orange and lemon peel
  • 150 grams mix of dried fruits (cherries, cranberries, figs)
  • juice and peel of 1 orange
  • 4-5 tablespoons port

About the yeast:

  • 200 grams of flour
  • 120 milliliters of fresh milk
  • 2.5 teaspoons dry yeast
  • 1 tablespoon sugar

For the dough:

  • 200 grams of sugar
  • 4 egg yolks
  • 130 milliliters of fresh milk
  • 100 grams of butter
  • 450 grams of flour
  • pinch of salt
  • 50 grams of pine nuts
  • 50 grams of walnuts
  • 1 egg white to spread on the bread
  • a few halves of walnuts and a handful of cedar for decoration

Method of preparation :

Sift 200 grams of flour, add sugar and yeast, stir. Pour in the warm milk and mix thoroughly. Shape into a ball and leave the yeast to rise in a warm place for about 1.5-2 hours.

Take care of the dough.
Mix the yolks with the sugar and a pinch of salt.
Heat the milk together with the butter until it melts. Allow the mixture to cool, it should be warm (neither hot nor cold).

When the sourdough rises, add the yolks and buttermilk. Then gradually add the sifted flour and knead the dough. Knead for 15-20 minutes.

Then add to it the pre-cut dried fruits and nuts (walnuts cut into large pieces with a knife), leaving a little for decoration.

Cover the dough with a towel and leave in a warm place until it increases in volume 2 times (the time can reach 4 hours).

An option is to form two loaves or use all the dough to make one large one.

Give the appearance of a ball and place in a tray, the bottom of which you have covered with parchment. Make a hole in the middle of the dough and form a round loaf, which you cover with a towel. Let rise in the heat for about an hour. To prevent the opening from closing, you can place a greased cup or other suitable container in the middle of the dough.
If it is fireproof, you can even bake the bread with it afterwards.

Once risen, smear the surface of the "gum" with whipped egg whites, garnish with the reserved nuts, dried fruits and candied citrus peels.

Bake at 180 degrees for 45-50 minutes.
