Put the lemon peel, juice, sugar, eggs and salt in the blender jug. Mix for 5 minutes on high speed.
Then reduce the speed to medium and start adding the butter cube by cube. Half a minute after you have put all the oil on, turn off the appliance. Transfer the mixture to a jar and allow to cool to room temperature for a few minutes. Cover and store the dish in the refrigerator.
The cream can be stored in the refrigerator for up to 5 days and in the chamber for up to 3 months.
Serve with pancakes, fried slices and more.
