Method of preparation :
Place the diced sweet potatoes in a bowl covered with cling film and heat in the microwave for 8 minutes or until soft. Allow to cool completely.
Grease 8 muffin tins and place paper in each.
Cut 1/4 of the sweet potato into even smaller pieces and set aside.
Put the remaining 3/4 cubes of sweet potato, avocado, almonds, polenta, maple syrup, eggs, baking powder, soda, milk and 1/4 teaspoon of salt in a food processor and blend until smooth.
Spread the mixture evenly in the muffin tins, garnish on top with the small cubes of sweet potatoes, feta cheese, seed mix and sweet red pepper.
Bake the cupcakes in the oven at 180 degrees for 22 minutes or until done. Cool and serve.
