Required products :

  • 1 sweet potato
  • 1 cup buttermilk at room temperature
  • 4 tablespoons butter
  • 2 eggs at room temperature
  • 2 tablespoons honey
  • 1 packet of dry yeast
  • 20 grams of salt
  • 600 grams of flour
  • 1 egg yolk
  • sea ​​salt for sprinkling

Method of preparation :

Punch the sweet potato with a fork and heat it in the microwave for about 4 minutes until soft. You can bake it for 30 minutes in the oven, cut in half.

Peel a squash, grate it and squeeze the juice. Puree, add the buttermilk, eggs, honey, yeast, salt and half the flour. Stir with a spoon.

Add the rest of the flour in portions, not stopping to knead for 7-8 minutes until an elastic dough is obtained.

Grease a large bowl and leave the dough in it, covered with foil for about 1-2 hours to rise.

Form 15 balls of dough and arrange them in a greased rectangular pan.

Cover with foil (if it rests on the bread, better grease it with oil so that it does not stick to them) and leave to rise for 1 hour and a half to double the loaves.

Preheat oven to 180 degrees.

Beat the yolk with a spoonful of water and carefully spread the bread without pressing. Sprinkle with sea salt crystals and bake for 15 minutes. Then increase the oven to 210 degrees and bake for another 10 minutes.

Serve the breads warm.
