How To Cook Sweet Potato Gnocchi - Recipe

Required products :

  • 1 kg of sweet potatoes
  • 1 tablespoon sea salt
  • 2 1/2 teaspoons flour
  • 1 large egg (if needed)

Method of preparation :

Peel the potatoes and cut them into large pieces. Put them in a saucepan, pour water to cover them and salt. Bring to a boil and drain the water. Return them to the hot pot and shake the container several times to evaporate the liquid absorbed in them.

Knead the potatoes and start adding 1/2 cup of flour to them until you get a homogeneous dough that you can form (you may not need the last half cup of flour).

Bring water to a boil in a saucepan. Take a piece of dough and drop it into the water. 30 seconds after surfacing, remove. If it does not disintegrate during cooking, there is no need to add the egg to the dough. If it crumbles, add the egg, knead and add more flour to achieve a good consistency.

Divide the dough into several portions, form each into a wick on a well floured surface and cut. At this stage, you can freeze all the gnocchi if you do not plan to use them immediately, and then prepare them in the same way, only keeping in mind that cooking them will take a little longer.

Boil the gnocchi in the same way as the test piece of dough - when they come to the surface, leave for another 30 seconds, then remove with a slotted spoon.

Serve with sauce of your choice, bacon, vegetables or as you like.
