Cover a pan with aluminum foil and put the whole head of garlic, pour 1 tablespoon of olive oil and bake for 1 hour until very soft. Squeeze the cloves into a bowl and set aside.
Combine sweet potatoes with almonds and eggs. Forge. Heat the remaining olive oil in a pan. Put 1/3 tea cup of the potato mixture and press with a spatula to form a flat meatball.
Fry for 2-3 minutes on each side, then drain on paper. Prepare all the meatballs in the same way, and put the finished ones in a warm oven so that they do not cool down. If necessary, add more fat to the pan during frying.
Add tahini, lemon and 60 milliliters of cold water to the roasted garlic and mash, season with salt and pepper.
Fry the sausage in a pan without fat, until ready - about 8-10 minutes - try to break the sausage into small crumbs.
Serve the meatballs with the crispy sausages and sauce, garnish as desired.
