Required products :

  • 500 grams of pork bacon with skin (pork belly)
  • salt and pepper
  • 1 sprig of thyme
  • 4 crushed garlic cloves
  • 3 teaspoons chicken broth
  • 3 tablespoons olive oil
  • 1 kg of sweet potatoes, cut into cubes
  • 3 onions, chopped
  • 2 tablespoons vinegar
  • 2 teaspoons maple syrup
  • 4 poached eggs, optional

Method of preparation :

Season the meat with salt and pepper.

Put in a large saucepan and add the thyme and garlic. Pour the broth on top and cook on low for about 3 hours until the meat is ready.

Cool and transfer to a pan, and press on top with another container in which to put a can of weight. Leave to cool in the refrigerator overnight.

If you want to separate the skin from the meat, you can leave it if desired. Cut it into small pieces.

Put 1 tablespoon of olive oil in a pan and fry the meat until browned - for about 4 minutes on each side. Using a slotted spoon, remove the meat from the pan and place the potatoes, seasoned with salt and pepper. Fry them for 10 minutes until golden. Transfer them to the meat.

Fry in the pan and onions until browned.

Return the meat and potatoes to the pan, along with the juices separated on a plate.

Drizzle with vinegar, maple syrup and stir to caramelize all the pieces, 2 minutes later remove from heat.

Serve with poached eggs if desired.
