How To Cook Sweet Potatoes With Kale And Coconut Milk - Recipe

Required products :

  • 4 sweet potatoes
  • 2 tablespoons olive oil
  • 2 bundles of kale, cleaned of stems and cut
  • 1 hot pepper, cleaned and chopped
  • 1 can of 400 grams of coconut milk
  • 2 teaspoons lime juice
  • 1/2 teaspoon curry powder
  • 1 teaspoon salt
  • 1/3 teaspoon grapefruit juice
  • 3 tablespoons butter
  • pinch of allspice
  • 3/4 cup coconut shavings

Method of preparation :

Punch the potatoes with a fork and heat them in the microwave for 6-7 minutes, until ready.

Meanwhile, sauté the kale leaves in olive oil until soft for about 3 minutes. Add the coconut milk and bring to the boil. Reduce heat, simmer for 6-7 minutes.

Remove from the heat, add the lemon juice, curry powder and salt.

Cut the sweet potatoes in half lengthwise. Remove the inside and mash with a fork. Add grapefruit juice, butter, allspice and salt. Sprinkle with coconut shavings (if desired, you can bake them in a dry pan in advance).

Fill the potato boats with the resulting mixture, and on top put the kale with coconut milk.
