Required products :

  • 1 teaspoon rice
  • 50 grams of sugar
  • 3 eggs
  • 200 milliliters of liquid cream with 35% fat
  • 250 milliliters of fresh milk
  • peel of 1 lemon
  • vanilla sugar or extract
  • raisins to taste and on request

 

Method of preparation :

Boil the milk together with half the citrus peel. Once it boils, pour the rice into it and add a pinch of salt. Reduce heat and cook for 25 minutes, then allow the porridge to cool, stirring occasionally.

Beat the cream, divide the eggs into yolks and whites.

Beat the yolks with the sugar until the crystals dissolve.

Beat the egg whites to a stiff foam.

Then carefully mix the cream, egg yolks, egg whites, add the remaining lemon zest and pour this combination over the rice.

Transfer to a pan (greased or covered with parchment) and bake for about half an hour at 180 degrees.

When the pie is ready, leave it to cool. To cut well, it is good to stand for an hour in the refrigerator.
