How To Cook Sweet Spaghetti With Spinach And Mushrooms - Recipe

Superfood with spinach, mushrooms and spiral sweet potatoes.

Required products :

  • 1 kg of sweet potatoes, peeled
  • 3 eggs
  • 1 cup Parmesan cheese, grated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon extra virgin olive oil
  • 3 strips of bacon
  • 230 grams of mushrooms, chopped
  • 2 cloves garlic, chopped
  • 1 packet of baby spinach

Method of preparation :

Put a large pot of water to boil on the stove.

Peeled sweet potatoes make spaghetti - use a peeler or spiral. Boil them in boiling water, then strain them, leaving 1/4 cup of the water in which you boiled them. Return the potatoes to the pan.

In a bowl, beat the eggs, parmesan, salt, pepper and 1/4 cup of the preserved water. Add the resulting mixture to the boiled spiral potatoes and cook, stirring for 2-3 minutes.

Heat olive oil in a large skillet over medium heat. Fry the mushrooms and bacon, stirring often, until the liquid evaporates from the mushrooms and begins to brown, then pour in the chopped garlic and spinach. Cook until the spinach is soft. Remove from the heat, pour over the potato mixture and stir.

Season with black pepper and serve.
