Required products :

  • 125 grams of unsalted butter, softened
  • 1 tablespoon finely grated lemon peel
  • 1 teaspoon powdered sugar
  • 2 eggs
  • 2/3 tea cup semolina
  • 1 1/2 tea cups self-swelling flour, sifted
  • 1/2 cup fresh milk
  • lubricating oil

For lemon syrup :

  • 1 teaspoon powdered sugar
  • 1/2 teaspoon freshly squeezed lemon juice
  • 1/2 teaspoon cold water
  • 1 small lemon, thinly sliced

Method of preparation :

  • In a large bowl, beat the butter, lemon zest and sugar with a mixer on high speed.
  • Add the eggs one at a time, beating after each addition.
  • Add semolina, flour and milk and mix with a wooden spoon until smooth.
  • Grease the bottom of a 20 cm round baking dish with oil.
  • Pour the cake batter and bake in a preheated 180 degree oven for about 45-50 minutes.
  • Meanwhile, make the lemon syrup by heating the sugar, lemon juice and water in a saucepan over low heat.
  • Cook for about 5 minutes, stirring until the sugar is completely melted.
  • Add the lemon slices and increase the power of the hob. Let the syrup simmer for about 4-5 minutes or until thickened.
  • Remove the lemon slices and pour the cake with 1/2 of the syrup.
  • Leave it for 15 minutes and turn it over on a tray.
  • Arrange the lemon slices on top and sprinkle with the remaining lemon syrup.
  • Cut and serve with a smile.
