Pour the couscous into a bowl, pour 200 milliliters of boiling water and close with a lid. Wait 10-15 minutes for it to swell.
Cut the parsley and onion into small pieces, the cucumbers into thin quarters and the tomatoes into two. Mix them in a salad bowl and add the cooled couscous and pieces of salmon.
Season with lemon juice, olive oil, salt and pepper. Stir and enjoy the filling salad.
