How To Cook Tangerine Salad, Roasted Beets And Feta Cheese - Recipe

Required products :

  • 2 medium-sized beets, peeled
  • 4 tea cups green beet leaves (or kale)
  • 1/2 teaspoon tangerine peel
  • 2 tangerines
  • 1 tablespoon vinegar
  • 1/4 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • black pepper to taste
  • 6 teaspoons extra virgin olive oil
  • 1/4 tea cup feta cheese, crushed
  • 1/4 cup pistachios, crushed

Method of preparation :

Preheat oven to 190 degrees.

Wrap the beets in foil, place in a small pan and bake for 1 hour or until soft. Remove from the oven and leave for 15 minutes in the foil, then unroll and leave for another 10 minutes. Cut the beets into slices.

Wash the beet leaves or kale. Peel a squash, grate it and slice it.

In a bowl, mix the mandarin peels, vinegar, mustard, 1/4 teaspoon salt, pepper and 1/4 teaspoon olive oil. Put the beet slices in the marinade bowl and let stand for 15 minutes.

Heat the remaining 2 teaspoons of olive oil in a large non-stick pan over medium heat and cook the green beet leaves (or curly cabbage) until soft. Season with salt and serve in 4 plates.

Garnish with slices of roasted beets and tangerine, feta cheese and pistachios and season with marinade. Serve this delicious salad with chicken or pork fillet if desired.
