Required products :

  • 2 whole eggs + 3 yolks
  • 125 grams of powdered sugar
  • seeds of 1 vanilla pod
  • 2 teaspoons corn flour
  • 300 milliliters of fresh milk (whole milk)
  • 300 milliliters of whole cream
  • 7-8 figs, halved
  • 1 1/2 teaspoons honey
  • 26 grams of pistachios, chopped in bulk

for the dough:

  • 140 grams of butter, chilled and chopped
  • 250 grams of flour
  • peel of 1 lemon, finely grated
  • 100 grams of sugar
  • 1 broken egg
  • 1 tablespoon fresh milk

Method of preparation :

Prepare the dough: put the flour, lemon peel and butter cubes in a bowl. Rub the cold butter into the flour with your fingers to make crumbs - you can do this in a food processor. Add sugar, egg, milk and knead. Wrap in foil and refrigerate for 1 hour.

On a floured surface, knead the dough and roll it out on a thin sheet with a diameter of 24 cm. Transfer to a suitable baking tray and remove the excess dough that comes out of the pan. Refrigerate for 30 minutes.

Preheat oven to 180 degrees. Place a greased sheet of baking paper on the dough and pour a few handfuls of beans there. Bake the marshmallows for 15 minutes, then remove the beans and bake for 5-10 minutes. Remove from the oven and reduce the temperature to 160 degrees.

For the filling, mix the yolks and whole eggs, sugar, vanilla and corn flour. Put the milk and cream in a saucepan. Heat and, when the liquid boils, remove from the heat and carefully pour in a thin stream to the egg mixture, stirring constantly. Strain the cream through a sieve to remove any large pieces if an egg has been cut.

Pour the cream over the marsh and arrange the figs on top.

Bake for 40-50 minutes, until dry.

Remove from the oven and carefully release the marshmallows from the walls of the pan. Drizzle with honey and sprinkle with pistachios for decoration.

Serve the dessert cold.

You can store it for up to 3 days in the refrigerator.
