Required products :

  • 1 pie dough
  • 9 small tomatoes (but not cherries)
  • 4-6 anchovies, finely chopped
  • 1 tablespoon capers
  • 4 tablespoons finely chopped parsley (you can make a mix of parsley, tarragon, basil, mint, chives, coriander)
  • 2 cloves garlic, grated
  • 1 tablespoon lemon juice
  • 2 teaspoons grated lemon peel
  • 4 tablespoons grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 egg yolk at room temperature
  • 3/4 tea cup of crushed goat cheese
  • 2-3 tablespoons of cream at room temperature
  • 1/2 cup cottage cheese
  • 9 slices of prosciutto

Method of preparation :

Form a loaf of dough into a pie pan and refrigerate until used.

Turn the oven to 185 degrees.

Cut off the lid of the tomatoes and remove as much of them as you can from the inside. Turn them upside down and place them on a wire rack to remove excess liquid.

Mix the anchovies, capers, spices, garlic, lemon juice and zest, parmesan and olive oil. Season with salt to taste.

Mix the yolk with the goat cheese, cream, the remaining lemon peel with a mixer and add salt. If the mixture seems too thick, add a little cream, and if it is thin - more goat cheese.

Remove the marshmallows from the refrigerator, spread it with the milk mixture and spread the curd on it.

Add salt to the tomatoes and put a little of the anchovy mixture in each. Put a slice of prosciutto in each. Arrange them on the cheese and bake for 40-50 minutes. Cool for 25 minutes before cutting.
