Required products :

for serving sauce:

  • 1/2 teaspoon mayonnaise
  • 1 tablespoon lemon juice
  • 2 teaspoons sriracha sauce
  • 1/4 teaspoon garlic powder
  • 1 tablespoon finely chopped green onions

for teriyaki sauce:

  • 2 teaspoons oil
  • 2 cloves garlic, finely chopped
  • 1 tablespoon grated ginger root
  • 2 teaspoons sriracha sauce
  • 1/4 tea cup soy sauce
  • 1/4 tea cup brown sugar
  • 2 teaspoons cornstarch
  • 2 tablespoons cold water

for enchiladas:

  • 2 teaspoons chicken, finely chopped
  • 1/4 cup finely chopped canned pineapple
  • 4 tortillas
  • 2 tea cups grated mozzarella
  • 1/2 cup finely chopped red peppers
  • 2 tablespoons finely chopped green onions
  • 4 teaspoons oil

Method of preparation :

Prepare the sauce for serving by mixing all the products in a bowl. Refrigerate.

For teriyaki sauce, heat the oil in a pan, add the garlic, ginger and sorghum sauce, fry for 1-2 minutes, stirring occasionally, the mixture should release its aroma, but should not turn brown.

Add the soy sauce and brown sugar. After 2 minutes, when the sugar has melted and started to form bubbles, dissolve the starch in cold water and pour into the mixture. Stir and cook for 30-60 seconds until the sauce thickens.

Transfer to a small bowl.

Put the chicken, pineapple and 1/4 cup of teriyaki sauce in the pan. Cook for 3-4 minutes, stirring to completely flavor the meat.

Sprinkle half of each tortilla with cheese and put the chicken mixture, pepper and a little green onion on top. Drizzle with teriyaki sauce and fold in half. Grease with oil and in a heated dry pan bake the tortillas with the greased side down until golden.

Grease the other side and carefully turn to bake it.

Cut them into triangles and serve with milk sauce and more teriyaki if desired.
