Required products :
- 1 kg of chicken legs / lanterns, wings, etc./
- 1 medium onion
- 2 large carrots
- 1/2 leek, only the white and light green part
- 100 grams of celery
- 1/4 cup fresh parsley
- 1 bay leaf
- 2 teaspoons thyme
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 7-8 teaspoons of cold water
Method of preparation :
- Wash, peel and chop the vegetables in bulk.
- Put the chicken in a large saucepan and add the vegetables.
- Add parsley, bay leaf, thyme, salt and pepper.
- Fill with cold water until completely covered.
- Heat over high heat until the broth boils and reduce the heat.
- Let it simmer on low heat for 2 hours, periodically removing the foam.
- Strain the broth and allow it to cool completely. Store in the refrigerator or freezer.
- Use cooked chicken to prepare another favorite dish.
