Required products :

  • 1 fresh chicken / about 2 kilograms /
  • 1 lemon, well washed and cut into circles
  • 3 cloves garlic, peeled
  • 2 tablespoons butter, unsalted and at room temperature
  • 4 sprigs of rosemary
  • salt and freshly ground black pepper

For the sauce :

  • 1/2 tea glass of dry white wine / or chicken broth /
  • 2 tablespoons butter, unsalted
  • salt to taste

Method of preparation :

  • Allow the chicken to stand at room temperature for 1 hour.
  • Wash it thoroughly under running cold water inside and out, then dry it. Make sure the cavity is as dry as possible.
  • Rub the inside with salt and pepper, then fill the cavity with chopped lemon, garlic cloves and rosemary sprigs.
  • Tie the thighs with twine so that they close the cavity.
  • Grease the outside of the chicken with butter and season with salt and pepper.
  • Transfer it to a small tray with a grid on the bottom.
  • Bake the chicken in a preheated 250 degree oven for about 50 minutes.
  • Cut the string and transfer the chicken to a plate of suitable size, letting it rest for about 10 minutes.
  • Pour the separated sauce from the roasted chicken in a pan and add the wine, heating them over medium heat.
  • After the liquid has reduced its volume by half, add the oil. Stir well and remove from the heat.
  • Strain the sauce and season with salt if necessary.
  • Serve the lemon chicken with the sauce.
