How To Cook Thick Bean Soup With Vegetables And Croutons - Recipe

Required products :

  • 180 grams of beans
  • 100 grams of celery stalks
  • 1 onion
  • 1 - 2 medium tomatoes
  • 100 grams of wheat bread
  • 1/2 red sweet pepper
  • 1 - 2 carrots
  • 1/2 teaspoon hot pepper
  • 20 milliliters of oil
  • parsley
  • salt to taste

 

Method of preparation :

Pre-soak the beans in cold water for several hours. Then drain the liquid, pour about 1.5 - 2 liters of clean water and boil the beans until soft.

Cut the pepper into cubes, celery into thin slices, carrots into straws.

Pour the vegetables into the pot with the beans, season with spices and cook for another 20 minutes.

Finely chop the onion and fry it in oil until golden.

Put it in a blender, add half the contents of the pot and tomatoes. Grind until smooth and return to the remaining beans. Add peeled and finely chopped tomatoes or tomato paste, sprinkle with chopped parsley and turn off the stove.

Cut the bread into small cubes and bake to get croutons. You can use spices of your choice and taste.

Serve the soup with the crispy toasted cubes.
