Required products :

  • 2 tea cups cream (unsweetened) for each type of butter
  • 1 teaspoon salt

for cinnamon oil:

  • 2 tablespoons sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon grated orange peel

for garlic oil:

  • 1/4 tea cup parsley, finely chopped
  • 1 teaspoon grated garlic
  • 1 teaspoon grated lemon peel

for pepper and sesame oil:

  • 2 tablespoons roasted sesame seeds
  • 2 teaspoons black pepper
  • 2 teaspoons smoked paprika

Method of preparation :

Put the butter in a food processor and blend it for a few minutes until the liquid separates from it. The oil itself will stick to the knife.

You can do the same by hand, using a whisk, at some point the cream will "cross" and small balls of butter will form on the stirrer.

Strain the liquid and save the oil.

Add a little water to the oil to wash it well. Rinse it several times (maybe in a jar, maybe in the bowl of the food processor). When washing, you can gently rub it between your fingers or in the food processor. When a ball starts to form, it's time to salt and stir.

Add the desired spices, adding all the products of the selected recipe and stir to combine well.

Put the butter in a bowl with cheesecloth. Wrap well and press it so that all the excess water can be removed from it.

Transfer it to a sheet of parchment paper or foil and form a roll, which you store in the refrigerator.
