Necessary products:

For swamps:

  • 4 eggs
  • 100 g of sugar
  • 100 g flour
  • 25 g of starch
  • 25 g of melted butter and cooled to room temperature

For the filling:

  • 100 g dark chocolate
  • 400 ml high-fat cream (with a fat content of 30% and more)
  • 500 g mascarpone
  • 75 g powdered sugar

For irrigation:

  • 150 ml of strong coffee
  • 120 ml coffee liqueur

For sprinkling:

  • cocoa powder

Method of preparation:

Mix the flour and starch and sift. Beat the eggs with the sugar until you get a light mass that will increase its volume 2-3 times. Carefully add the flour to the egg mixture, then the butter and mix gently again. Pour the dough into a detachable baking dish greased with oil and bake in the oven at 180 degrees for about 25 minutes or until done (check readiness with a toothpick). Do not open the oven for the first 10-15 minutes of baking. When the finished dough cools completely, cut it into 3 equal marshes. Grate the chocolate on a coarse grater. Mix the liqueur and coffee. Mash the mascarpone together with half of the powdered sugar to form a homogeneous mixture (but not semi-liquid). Beat the other half of the powdered sugar with the cream and mix carefully with the mascarpone.

 

Take a baking dish and go around its walls with baking paper, the height of which is more than the walls of the dish. Put one loaf in the pan, soak it with 1/3 of the coffee syrup and liqueur, spread with some of the resulting cream, sprinkle with grated chocolate. Repeat all this with the second tray. Place the third one on top and press it lightly. Soak with the "syrup" and put in the refrigerator for 1-2 hours. Then remove, remove the ring and paper. Spread the remaining cream on the side and top of the cake, sprinkle with grated chocolate and sprinkle with cocoa. Place the cake in the refrigerator for at least two hours and then serve.
