Required products :
150 grams of mascarpone
50 grams of sugar
2 eggs
100-200 grams of cookies or other suitable biscuits
1 small fresh pineapple
100 milliliters of coconut liqueur
cocoa powder and coconut shavings for decoration
Method of preparation :
Peel a squash, grate it and cut it into small cubes.
Separate the yolks from the whites. Beat the first with the sugar until white and without stopping the beating, add the mascarpone.
Turn the egg whites into a stiff foam and, using a spatula, carefully add to the finished sweet mixture.
Dip the cookies in the coconut liqueur and arrange a layer of them in a suitable container. Put some cream and pineapple pieces on them. Followed again by a row of cookies, mascarpone, pineapple.
Put the dessert in the refrigerator for 6 hours.
When removed, sprinkle with coconut shavings, cocoa powder and serve.
