Syrup
Mix the coffee with the liqueur, sugar and pour boiling water.
Ice cream
Beat the yolks and whites together with the sugar in a water bath. A thick mass should be obtained (it takes about 5 minutes to break).
Whip the cream and mascarpone until "hard peaks" form. Add the egg foam and liqueur to them, stir. Put the mixture in the refrigerator for a while.
Ganasha
Pour the cream into a suitable container and place on the hob. When it boils, remove from the heat, add the chocolate and stir until smooth.
The assembly
Cover the bottom and walls of a detachable cake tin with an approximate diameter of 21-22 centimeters with stretch foil. Cover the bottom with cookies that you have previously syruped in the coffee sweetness. The layer must be dense. Cover it with half of the Ganache cream and apply half of the ice cream on it.
Followed by a row of syrupy cookies, again chocolate cream and finish with ice cream.
Thoroughly level the surface and cover with plastic wrap. Put in the freezer until the ice cream freezes.
Before serving the cake, remove the ring from the form, sprinkle with grated chocolate and wait 10-15 minutes before eating.
