Fry the onion in olive oil for 6-8 minutes until soft. Add garlic and spinach. When soft, add the cream, mustard and thyme. Season with salt and pepper.
Arrange the potatoes in a pan and pour the resulting texture, sprinkle with grated manchego cheese. Cover with foil and bake for 1 hour and 20 minutes at 200 degrees - in a preheated oven. Remove the foil from the pan and bake for 15 minutes until appetizing golden crust.
