Required products :

  • 2 tablespoons curry powder
  • 400 grams of tofu
  • 4 tablespoons oil
  • 1 small pumpkin
  • 1 onion
  • 2 teaspoons grated ginger
  • 1 can of 400 grams of coconut milk
  • 1 teaspoon brown sugar
  • 8 teaspoons chopped kale or chard
  • lemon
  • 1/2 teaspoon salt and pepper

Method of preparation :

Combine curry, salt and pepper in a bowl.

Dry the tofu with kitchen paper and cut it into cubes. Put it in a bowl and season it with 1 teaspoon of the spice mix.

Heat 2 tablespoons of fat in a pan over high heat. Add the tofu slices and let them look nice toasted. Turn them every 2 minutes to bake on all sides. Transfer them to a plate until you need them again.

In the same pan, add the remaining oil and fry the pumpkin (cut into thin slices) and onion, ginger and the remaining mixture of spices. Cook for about 4-5 minutes. Add the coconut oil, sugar and bring to a boil. Add the kale and cook until soft, stirring. Return the fried tofu to the pan and cover for 3-5 minutes with a lid. Remove from the heat and pour a little lemon juice to taste - about 2 tbsp.

The dish can be served on a canapé of brown rice.
