How To Cook Tomato Sauce With Onion, Garlic And Bay Leaf - Recipe

Necessary products:

1,200 pounds of tomatoes

100 milliliters of oil

3 onions

2 heads of garlic

20 grams of sugar

20 grams of salt

7 grains of black pepper

1 bay leaf

a pinch of cayenne pepper

Method of preparation :

Peel the garlic and mash it to make a pulp. Grind the tomatoes and strain them to remove the skins and seeds. Cut the onion first in two, then each half into thin semicircles. Fry it in hot oil until lightly browned. Add garlic and 5-6 tablespoons of hot water to it. Close the pan with a lid and leave the mixture on the stove for 10 minutes.

Pour the tomatoes into a suitable container, bring them to a boil and when this happens, add the mixture of onion and garlic. Let the sauce cook for 30 minutes, stirring during this time. Then add the spices (salt, sugar, bay leaf, cayenne and black pepper), cook for another 3 minutes and remove from the heat.

The sauce is ready. While still hot, distribute it in jars, close with boiled lids and pasteurize at 85 degrees for 30 minutes and seal.
