Required products :

50 milliliters of olive oil
1 onion
1 clove of garlic
1 kilogram of ripe tomatoes
500 milliliters of chicken broth
250 milliliters of water
2 sprigs of basil
1 tablespoon red wine vinegar
mozzarella to serve
150 grams of cherry tomatoes

Method of preparation :

Heat the olive oil in a large saucepan and add the finely chopped onion, mashed garlic clove and fry until soft and fragrant.

Then add the diced tomatoes and let them simmer for 3-4 minutes. Pour the broth, water, add basil and cook the soup over low heat for 10-12 minutes.

When removed from the heat, remove the basil stalks, season with a spoonful of vinegar, salt and ground black pepper to taste and puree using a blender.

Serve the soup cold by sprinkling it with olive oil and garnish with pieces of mozzarella and slices of cherry tomatoes.
