Required products :

  • 1 liter of chicken broth
  • 120 grams of bacon
  • 1 kg of tomatoes
  • 800 grams of canned chickpeas (2 cans)
  • 50 grams of baby spinach
  • 1 medium onion
  • 5 cloves garlic
  • 1 large bunch of basil
  • 5 sprigs of parsley
  • 2 tablespoons tomato paste
  • 3 slices of dried white bread
  • pinch of chili pepper (flakes)
  • 2 teaspoons dry mixture of Italian spices
  • parmesan to serve
  • olive oil
  • salt, sugar, freshly ground black pepper

Method of preparation :

Cut the bacon, onion and tomatoes into small cubes, peeling the onion first, and scald the tomatoes with boiling water and remove their skins. Saturate the garlic.

Heat olive oil in a saucepan and fry the bacon until golden, then remove with a slotted spoon on paper. In the same pan, pour the onion, fry it for 3-5 minutes (until soft) and add the garlic, chili flakes and cook for another minute until the characteristic aroma of garlic is released.

Then add the tomato puree and fry the mixture for another minute or two, stirring.

It's time for the tomatoes and spices, then let the combination simmer over medium heat for 15 minutes.

Then pour the broth into the pan, add the basil leaves, bread and wait for the soup to boil. At this point, reduce the heat to a minimum and cook for 20 minutes.

Turn the finished dish into a smooth puree using a blender or blender and season with salt, pepper and a pinch of sugar.

Pour the canned chickpeas colander, rinse the beans under running water and add them to the soup along with the pieces of bacon.

Also add the chopped parsley and heat the soup for 3-5 minutes on medium heat.

Divide into bowls, sprinkle each serving with olive oil and serve with grated Parmesan cheese.
