Required products :

1 teaspoon boiled rice

2 liters of tomato juice

1 potato

1 onion

700 - 800 grams of cod fillet

500 grams of grated tomatoes

5 - 6 tablespoons of olive oil with aromatic herbs and spices

Bay leaf

salt, sugar and pepper - to taste

Method of preparation :

Finely chop the onion and fry it in a pan, add the peeled and diced potatoes. Fry until semi-finished. Cut the fillet into pieces, pour into the pan and fry until golden brown. Then transfer everything to a saucepan, add the tomatoes and pour the tomato juice. Add salt, sugar and pepper to taste. Bring the broth to a boil, add the bay leaf, close the jar with a lid and let the soup cook until almost ready. Five minutes before removing from the heat, pour the aromatic olive oil.

Put the cooked rice in a suitable plate, forming it into a pile and pour a few scoops of tomato soup on top. You can sprinkle lightly with olive oil and sprinkle with chopped parsley.
