Required products :

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion
  • 1 1/2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 400 grams of canned tomatoes, drained and the juice set aside
  • 3 cloves garlic, pressed
  • 2 tablespoons flour
  • 2 bay leaves
  • 3-4 teaspoons of vegetable or chicken broth
  • 2 tea cups boiled pasta
  • 280 grams of frozen spinach, thawed and drained
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon balsamic vinegar

Method of preparation :

  • Heat olive oil and butter in a large saucepan over medium heat.
  • Add the onion and fry for 3 minutes, stirring often.
  • Add the brown sugar, tomato paste and canned tomatoes. Save the juice.
  • Stir and cook for about 13 minutes until the tomatoes begin to dry.
  • Add the garlic and cook for another 1 minute.
  • Sprinkle with flour, stir and cook for another 1 minute.
  • Add the tomato juice, bay leaves and 1 cup of chicken or vegetable broth.
  • Continue to add broth to the desired density.
  • Bring the soup to a boil, reduce the heat and simmer for 10-15 minutes.
  • Remove the bay leaves and discard them.
  • Add the pasta, spinach and balsamic vinegar. Season with salt and pepper.
  • Serve the tomato soup hot, garnished with grated Parmesan or something else to taste.
