How To Cook Tomato Soup With Quinoa And Parmesan Chips - Recipe

Required products :

  • 2 kilograms of tomatoes, cut
  • 1 teaspoon basil leaves
  • 1 head of garlic
  • olive oil
  • 2 teaspoons boiled quinoa
  • 1 1/2 liters of chicken broth
  • juice and pepper

for parmesan chips:

  • 1/2 cup boiled quinoa
  • 1/2 cup parmesan, grated
  • pepper

Method of preparation :

Turn the oven to 200 degrees and prepare the Parmesan chips. To do this, combine all the products for him in a bowl. Spread in a tray lined with paper, adding a spoonful of the mixture. Make sure you leave enough space between the piles. Bake for about 5-7 minutes, until the chips acquire a light golden tan, leave to cool in the pan.

For the soup: put the tomatoes, basil and garlic in a pan, pour in the olive oil and bake for about 45 minutes until the tomatoes are cracked and soft and the basil is crispy.

Spread the cooked quinoa on the bottom of a pan, pour a little olive oil and bake for the last 15 minutes of roasting the tomatoes.

Set the basil leaves aside for later use.

Squeeze the inside of the garlic cloves in a saucepan, add the tomatoes (without the peel), pour the broth and let the liquid boil. Then lower the temperature and let the sauce simmer for 10 minutes until it thickens a bit. Blend the soup, which you can do directly in the pot if you have a blender.

Add the roasted quinoa and season to taste with salt and pepper.

Distribute in bowls and put the basil leaves in each portion. Serve with parmesan chips.
