Fish stews are very easy and quick to prepare, and in this case we present you a warm stew with tomato sauce and onions, and bulgur salad gives extra freshness. If you wish, you can put a few spoonfuls of salad directly in the stew.

Required products :

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 1 clove of garlic, mashed
  • 1 teaspoon ginger
  • 1 teaspoon cumin
  • 1/2 teaspoon hot red pepper
  • 400 grams of canned tomatoes
  • 300 milliliters of vegetable broth
  • 1 head of fennel, finely chopped
  • 30 grams of coriander, chopped (or parsley)
  • 225 grams of sliced ​​white fish fillet
  • 100 grams of bulgur, rinsed
  • 1 teaspoon lemon juice
  • 50 grams of grilled olives, chopped

Method of preparation :

Boil bulgur in 400 milliliters of salted water. When the liquid boils, cover with a lid and cook on low heat for about 15 minutes.

Meanwhile, fry the onion in a pan for 5 minutes until soft. Add the garlic and fry for 2 minutes, then add the tomatoes and broth, let the sauce simmer for 5 minutes.

Add the fennel and half of the coriander, cook for 8 minutes and add the fish. Cook over low heat for 6 minutes, until the fillet and fennel are cooked.

Remove the bulgur from the heat and wait 5 minutes before adding the olives and remaining coriander.
