This recipe aims to help you prepare the leftovers of boiled or baked potatoes in a delicious way, so that you can renew the dish, enrich it and mark the next dinner. It is even worth preparing a few potatoes on top to make sure you have leftovers.

Required products :

  • 2 tablespoons oil
  • 1/2 small green pepper, finely chopped (about 1/2 tea cup)
  • 2 potatoes - leftovers from baked or boiled, cut into cubes
  • 4 green onion stalks, finely chopped
  • 1 clove garlic, chopped
  • salt and pepper
  • 1/3 teaspoon parmesan

Method of preparation :

Put the oil in a pan (you can use fried bacon or lard) and heat.

Add the pepper and fry for 2 minutes.

Add tomatoes, onions and garlic, season with salt and pepper, stir occasionally and fry for 3-4 minutes.

Spread the potatoes all over the bottom of the pan and sprinkle with Parmesan (or yellow cheese, cheddar, etc.)

Cover the pan with a lid and let the dish cook for another 5-7 minutes until the potatoes are browned.

Serve immediately, adding hot pepper or spicy sauce, cheese, more cheese. If you want, even add an egg, let your imagination run wild.
