Required products :

1 piece of trout fillet with skin each 120 grams
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon lemon juice
2 teaspoon chopped parsley
1/2 teaspoon capers
1 lemon

Method of preparation :

Make two light cross-sections of the fillet over the skin. Then turn and rub with salt and pepper.
Heat in a pan over medium heat 1/2 tablespoon of butter along with olive oil. Put the fish skin side up in the fat and fry for about 3 minutes - until golden. Turn on the other side and let it cook for another 2 minutes. When removed, leave warm.
In the same bowl, add the remaining oil and stir until golden brown. Immediately add lemon juice, parsley, capers and citrus slices. Stir.
Put the fish in a plate and pour the fragrant sauce.
Serve immediately.
