How To Cook Trout Pasta And Orange-Lemon Sauce With White Wine - Recipe

Required products :

  • 250-300 grams of pasta
  • 350 grams of trout
  • 4 egg yolks
  • peel 1/2 lemon and 1/2 orange
  • 2-3 tablespoons of orange juice
  • 2-3 tablespoons lemon juice
  • 4 tablespoons dry white wine
  • 1/2 teaspoon sugar
  • 50 grams of butter
  • 50-60 milliliters of vegetable broth
  • 2 tablespoons olive oil
  • salt and parsley

 

Method of preparation :

Mix the two citrus juices (optionally you can add some Italian herbs). Pour this marinade over the fish and leave for half an hour, then cut it into cubes.

Put the yolks in a pan and add the grated lemon and orange peel, as well as the marinade. Pour the wine, season with sugar and salt.

Heat the mixture (over low heat in a water bath) until it thickens, stirring constantly. Then carefully pour the broth and add the butter.

Stir well, add the chopped parsley and remove the sauce from the heat. Let cool a bit.

Boil the paste according to the instructions on the package and drain the water with a colander.

Fry the fish pieces over high heat.

Spread the pasta on a plate, put pieces of trout on it and pour the aromatic sauce.
